About this recipe

This modern take on traditional pho blends the refreshing taste of mint with the aromatic flavors of Vietnam. Perfect for any season, this dish combines tender rice noodles, thinly sliced beef, and a variety of fresh herbs and garnishes for a delightful and nourishing meal.

Ingredients

  • 8 cups low-sodium beef broth
  • 1 lb beef sirloin, thinly sliced
  • 1 package rice noodles
  • 1 bunch fresh mint, leaves only
  • 1 bunch fresh cilantro, chopped
  • 1 lime, cut into wedges
  • 1 jalapeno, thinly sliced
  • 1 large onion, sliced
  • 1 tablespoon fish sauce

  • 1 tablespoon hoisin sauce
  • 1 piece fresh ginger, sliced
  • 3 star anise pods
  • 1 cinnamon stick

Directions

  1. 1

Toast star anise and cinnamon in a dry pan over medium heat until fragrant.

  2. 2

In a large pot, bring beef broth, ginger, toasted spices, fish sauce, and soy sauce to a simmer.

  3. 3

Add sliced onion to the broth and cook for 15 minutes.

  4. 4

Remove spices and onions from broth using a skimmer.

  5. 5

Add sliced beef to the broth and cook for 2-3 minutes until just cooked.

  6. 6

Meanwhile, prepare rice noodles according to packaging; drain and divide among serving bowls.

  7. 7

Ladle hot broth and beef over noodles.

  8. 8

Top with fresh mint, cilantro, lime wedges, jalapeno slices, and hoisin sauce.

Chef's tip

Ensure beef is cut against the grain for tenderness. Adjust salt levels by using low-sodium broth and soy sauce.
