- 1 tsp ground cardamom
- 1 cinnamon stick
- 1 tsp ground turmeric
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cups beef or vegetable stock
- 1/4 cup raisins
- 1/4 cup slivered almonds
- 3 tbsp olive oil
- 1 tbsp ghee
- 1/4 cup chopped fresh parsley
Directions
- 1
Heat olive oil in a large pot over medium-high heat. Sear the meat until browned on all sides.
- 2
Add onion and garlic to the pot, sauté until softened.
- 3
Stir in the cumin, coriander, cardamom, cinnamon stick, turmeric, salt, and pepper.
- 4
Pour in the stock and bring to a boil. Lower heat, cover, and simmer for 1 hour.
- 5
Meanwhile, rinse the rice until clear and soak in warm water for 30 minutes.
- 6
Remove the cooked meat and set aside. Add rice to the pot, bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes.
- 7
Stir in the raisins and almonds. Return the meat to the pot, cover, and cook for an additional 10 minutes.
- 8
Remove from heat, let stand for 5 minutes. Fluff the rice with a fork and garnish with parsley before serving.
Chef's tip
Ensure the rice is well-rinsed to prevent it from becoming sticky. Adjust spices to taste, adding more heat if desired.
