Ingredients
- 2 lbs. lamb or beef, cut into chunks
- 2 cups basmati rice
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 1 tsp. ground cardamom
- 1 tsp. ground cinnamon
- 1 tsp. ground turmeric
- 1 tsp. salt
- 4 cups water
- 1/4 cup raisins
- 1/4 cup slivered almonds
- 1/4 cup chopped fresh parsley
Instructions
- In a large pot, heat some oil over medium-high heat. Add the meat and cook until browned on all sides.
- Add the onion and garlic and cook until softened.
- Add the spices and salt and stir to coat the meat and onions.
- Add the water and bring to a boil. Reduce heat to low, cover, and simmer for 1 hour.
- Meanwhile, rinse the rice until the water runs clear. Soak the rice in water for 30 minutes.
- After the meat has simmered for 1 hour, remove it from the pot and set aside.
- Add the rice to the pot and stir to combine with the remaining liquid. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
- Add the raisins and almonds to the pot and stir to combine. Return the meat to the pot and cover. Cook for an additional 10 minutes.
- Remove from heat and let sit for 5 minutes. Fluff the rice with a fork and sprinkle with fresh parsley before serving.
