Ingredients

  • 2 lbs lamb or beef, cut into chunks
  • 2 cups basmati rice
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground cardamom
  • 1 cinnamon stick
  • 1 tsp ground turmeric
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cups beef or vegetable stock
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • 3 tbsp olive oil
  • 1 tbsp ghee
  • 1/4 cup chopped fresh parsley

Directions

    Heat olive oil in a large pot over medium-high heat. Sear the meat until browned on all sides.

    Add onion and garlic to the pot, sauté until softened.

    Stir in the cumin, coriander, cardamom, cinnamon stick, turmeric, salt, and pepper.

    Pour in the stock and bring to a boil. Lower heat, cover, and simmer for 1 hour.

    Meanwhile, rinse the rice until clear and soak in warm water for 30 minutes.

    Remove the cooked meat and set aside. Add rice to the pot, bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes.
