Ingredients

  • 2 tablespoons miso paste
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • 1 cup sliced mushrooms
  • 1 cup chopped broccoli
  • 1 cup sliced bell peppers
  • 1 cup sliced zucchini
  • 1 cup diced tofu
  • 2 green onions, sliced
  • 2 cups vegetable broth
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Salt and pepper to taste

Instructions

  • In a small bowl, whisk together miso paste, soy sauce, rice vinegar, sesame oil, garlic, and ginger.
  • In a large pot, heat some oil over medium heat. Add mushrooms, broccoli, bell peppers, and zucchini. Cook until vegetables are tender.
  • Add tofu and green onions to the pot. Cook for another 2 minutes.
  • Pour in the vegetable broth and bring to a simmer.
  • In a separate bowl, mix cornstarch and water until smooth. Stir the mixture into the pot.
  • Cook for another 5 minutes, or until the soup has thickened.
  • Season with salt and pepper to taste.
  • Serve hot and enjoy!
