Ingredients
- 2 tablespoons miso paste
- 1 tablespoon low sodium soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 clove garlic, minced
- 1 teaspoon grated ginger
- 1 cup sliced mushrooms
- 1 cup chopped broccoli
- 1 cup sliced bell peppers
- 1 cup sliced zucchini
- 1 cup diced tofu
- 2 green onions, sliced
- 2 cups vegetable broth
- 1 tablespoon cornstarch
- 1 tablespoon water
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together miso paste, soy sauce, rice vinegar, sesame oil, garlic, and ginger.
- In a large pot, heat some oil over medium heat. Add mushrooms, broccoli, bell peppers, and zucchini. Cook until vegetables are tender.
- Add tofu and green onions to the pot. Cook for another 2 minutes.
- Pour in the vegetable broth and bring to a simmer.
- In a separate bowl, mix cornstarch and water until smooth. Stir the mixture into the pot.
- Cook for another 5 minutes, or until the soup has thickened.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
