Ingredients

  • 1 large fish, cleaned and scaled
  • 1 cup of rice
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of paprika
  • 1/4 teaspoon of cumin
  • 1/4 teaspoon of coriander
  • 1/4 teaspoon of turmeric
  • 1/4 teaspoon of cinnamon
  • 1/4 teaspoon of nutmeg
  • 1/4 teaspoon of allspice
  • 1/4 teaspoon of cloves
  • 1/4 teaspoon of cardamom
  • 1/4 teaspoon of ginger
  • 1/4 teaspoon of cayenne pepper
  • 1/4 cup of chopped parsley
  • 1/4 cup of chopped cilantro
  • 1 lemon, sliced

Instructions

  • Preheat the oven to 375 degrees F.
  • In a large bowl, mix together the rice, onion, garlic, olive oil, salt, black pepper, paprika, cumin, coriander, turmeric, cinnamon, nutmeg, allspice, cloves, cardamom, ginger, cayenne pepper, parsley, and cilantro.
  • Stuff the fish with the rice mixture and place it in a baking dish.
  • Arrange the lemon slices on top of the fish.
  • Bake for 45-50 minutes, or until the fish is cooked through and the rice is tender.
  • Serve hot, garnished with additional parsley and cilantro if desired.
