Ingredients
- 2 lbs beef stew meat
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 stalks celery, chopped
- 1 can diced tomatoes
- 4 cups beef broth
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, brown the beef over medium-high heat.
- Add the onion and garlic and cook until softened.
- Add the carrots and celery and cook for a few minutes.
- Add the diced tomatoes, beef broth, paprika, cumin, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 2-3 hours, or until the beef is tender.
- Remove the bay leaf and serve hot.
