  • 2 tbsp olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 4 large carrots, chopped
  • 3 stalks celery, chopped
  • 2 tbsp tomato paste
  • 1 can (28 oz) diced tomatoes
  • 4 cups beef broth
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • Chopped fresh parsley for garnish

Directions

    Heat olive oil in a large Dutch oven over medium-high heat.

    Brown the beef in batches, ensuring all sides are seared, then remove and set aside.
