Ingredients

  • 2 lbs beef stew meat
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  • In a large pot or Dutch oven, brown the beef over medium-high heat.
  • Add the onion and garlic and cook until softened.
  • Add the carrots and celery and cook for a few minutes.
  • Add the diced tomatoes, beef broth, paprika, cumin, thyme, bay leaf, salt, and pepper.

  • Remove the bay leaf and serve hot.
