About this recipe

Indulge in this modern take on a classic lamb stew. Rich, savory flavors meld together with tender chunks of lamb, carrots, potatoes, and peas simmered to perfection. Perfect for a cozy night in, this stew is both comforting and nourishing.

Ingredients

  • 2 pounds lamb, cut into 1-inch chunks
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 cup frozen peas
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 bay leaves
  • Optional garnish: fresh parsley

Directions

  1. 1

Heat olive oil in a large pot over medium heat.

  2. 2

Season lamb with salt and pepper, then brown in the pot for 3-4 minutes per side. Remove and set aside.

  3. 3

In the same pot, add onion and garlic; sauté until the onion is translucent.

  4. 4

Stir in tomato paste, then add carrots, potatoes, and frozen peas.

  5. 5

Return lamb to pot, add beef broth, thyme, rosemary, bay leaves, salt, and pepper.

  6. 6

Bring to a boil, reduce to a simmer, and cook for 1 hour, stirring occasionally.

  7. 7

Remove bay leaves, adjust seasoning if needed, and serve hot.

  8. 8

Garnish with fresh parsley if desired.

Chef's tip

Feel free to add a bit of red wine during browning for extra depth of flavor. Serve with crusty bread.
