Ingredients

  • 2 pounds lamb, cut into chunks
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 cup frozen peas
  • 4 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  • In a large pot, heat the olive oil over medium heat.
  • Add the lamb chunks and cook until browned on all sides.
  • Remove the lamb from the pot and set aside.
  • In the same pot, add the diced onion and minced garlic.
  • Cook until the onion is translucent and the garlic is fragrant.

  • Season with salt and pepper to taste.
  • Bring the stew to a boil, then reduce heat to low and simmer for 1 hour, or until the lamb is tender.
