Ingredients
- 2 pounds lamb, cut into chunks
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 cup frozen peas
- 4 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the lamb chunks and cook until browned on all sides.
- Remove the lamb from the pot and set aside.
- In the same pot, add the diced onion and minced garlic.
- Cook until the onion is translucent and the garlic is fragrant.
- Add the sliced carrots, diced potatoes, frozen peas, beef broth, dried thyme, and dried rosemary to the pot.
- Season with salt and pepper to taste.
- Bring the stew to a boil, then reduce heat to low and simmer for 1 hour, or until the lamb is tender.
- Serve hot and enjoy!
