Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  • Preheat oven to 375°F.
  • Season chicken breasts with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken breasts and cook until browned on both sides, about 3-4 minutes per side.
  • Remove chicken from skillet and set aside.
  • Add butter to the same skillet and melt over medium heat.
  • Add onion and garlic and cook until softened, about 2-3 minutes.
  • Add sun-dried tomatoes and cook for another 1-2 minutes.
  • Add chicken broth and bring to a simmer.
  • Add heavy cream, Parmesan cheese, basil, and oregano and stir to combine.
  • Return chicken to skillet and spoon sauce over the top.
