Ingredients
- 1 head of cauliflower
- 2 eggs
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/2 cup sugar-free pizza sauce
- 1/2 cup shredded mozzarella cheese (for topping)
- Pepperoni slices
- Sliced bell peppers
- Sliced black olives
- Sliced mushrooms
Instructions
- Preheat the oven to 400°F.
- Rice the cauliflower by pulsing it in a food processor until it resembles rice grains.
- Microwave the riced cauliflower for 5 minutes, then let it cool.
- Mix the cauliflower with eggs, 1 cup mozzarella, parmesan, oregano, and garlic powder.
- Press the mixture onto a baking sheet lined with parchment paper to form a crust.
- Bake the crust for 20 minutes.
- Spread pizza sauce on the crust, then top with 1/2 cup mozzarella, pepperoni, bell peppers, olives, and mushrooms.
- Bake for an additional 10-15 minutes until cheese is melted and bubbly.
- Slice and serve.
