Ingredients

  • 1 head of cauliflower
  • 2 eggs
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 cup sugar-free pizza sauce
  • 1/2 cup shredded mozzarella cheese (for topping)
  • Pepperoni slices
  • Sliced bell peppers
  • Sliced black olives
  • Sliced mushrooms

Instructions

  • Preheat the oven to 400°F.
  • Rice the cauliflower by pulsing it in a food processor until it resembles rice grains.
  • Microwave the riced cauliflower for 5 minutes, then let it cool.
  • Mix the cauliflower with eggs, 1 cup mozzarella, parmesan, oregano, and garlic powder.
  • Press the mixture onto a baking sheet lined with parchment paper to form a crust.
  • Bake the crust for 20 minutes.
  • Spread pizza sauce on the crust, then top with 1/2 cup mozzarella, pepperoni, bell peppers, olives, and mushrooms.
  • Bake for an additional 10-15 minutes until cheese is melted and bubbly.
  • Slice and serve.
