Ingredients
- 4 large eggs
- 1/4 cup heavy cream
- 1/4 cup diced red bell pepper
- 1/4 cup diced green bell pepper
- 1/4 cup diced onion
- 2 slices bacon, cooked and crumbled
- 1/4 cup shredded cheddar cheese
- 1 tablespoon butter
- Salt and pepper, to taste
Instructions
- In a small bowl, whisk together the eggs and heavy cream. Set aside.
- In a large skillet over medium heat, melt the butter. Add the diced peppers and onion and sauté until softened, about 5 minutes.
- Add the whisked eggs to the skillet and stir gently to combine with the veggies. Cook, stirring occasionally, until the eggs are set but still moist, about 5-7 minutes.
- Sprinkle the crumbled bacon and shredded cheese over the top of the eggs. Cover the skillet and cook for an additional 1-2 minutes, or until the cheese is melted.
- Season with salt and pepper to taste. Serve hot.
