Ingredients

  • 4 large eggs
  • 1/4 cup heavy cream
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced onion
  • 2 slices bacon, cooked and crumbled
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon butter
  • Salt and pepper, to taste

Instructions

  • In a small bowl, whisk together the eggs and heavy cream. Set aside.
  • In a large skillet over medium heat, melt the butter. Add the diced peppers and onion and sauté until softened, about 5 minutes.
  • Add the whisked eggs to the skillet and stir gently to combine with the veggies. Cook, stirring occasionally, until the eggs are set but still moist, about 5-7 minutes.
  • Sprinkle the crumbled bacon and shredded cheese over the top of the eggs. Cover the skillet and cook for an additional 1-2 minutes, or until the cheese is melted.
  • Season with salt and pepper to taste. Serve hot.
