Ingredients

  • 20 fresh okra pods
  • 1/2 cup almond flour
  • 1/2 cup grated parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh oregano
  • 1/4 cup chopped fresh thyme
  • 1/4 cup chopped fresh rosemary
  • 1/4 cup chopped fresh chives
  • 1/4 cup chopped fresh garlic
  • 1/4 cup chopped fresh onion
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F.
  • Wash the okra pods and cut off the tops.
  • Using a small knife, carefully remove the seeds and pulp from the inside of the okra pods.
  • In a mixing bowl, combine the almond flour, parmesan cheese, herbs, garlic, onion, and olive oil. Mix well.
  • Stuff each okra pod with the mixture and place them in a baking dish.
  • Bake for 25-30 minutes, or until the okra is tender and the stuffing is golden brown.
