Ingredients
- 20 fresh okra pods
- 1/2 cup almond flour
- 1/2 cup grated parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh oregano
- 1/4 cup chopped fresh thyme
- 1/4 cup chopped fresh rosemary
- 1/4 cup chopped fresh chives
- 1/4 cup chopped fresh garlic
- 1/4 cup chopped fresh onion
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F.
- Wash the okra pods and cut off the tops.
- Using a small knife, carefully remove the seeds and pulp from the inside of the okra pods.
- In a mixing bowl, combine the almond flour, parmesan cheese, herbs, garlic, onion, and olive oil. Mix well.
- Stuff each okra pod with the mixture and place them in a baking dish.
- Bake for 25-30 minutes, or until the okra is tender and the stuffing is golden brown.
- Serve hot and enjoy!
