Ingredients

  • 1 lb pork belly, sliced
  • 4 cups chicken broth
  • 2 cups water
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp sesame oil
  • 1 tbsp grated ginger
  • 2 cloves garlic, minced
  • 2 green onions, sliced
  • 2 zucchinis, spiralized
  • 2 boiled eggs, sliced
  • 1/4 cup chopped cilantro

Instructions

  • In a large pot, cook the pork belly over medium heat until browned and crispy, about 10 minutes.
  • Add the chicken broth, water, soy sauce, fish sauce, sesame oil, ginger, and garlic to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Add the green onions and zucchini noodles to the pot. Simmer for an additional 5 minutes, until the zucchini is tender.
