Ingredients

  • 3 large eggs
  • 1/4 cup chopped spinach
  • 1/4 cup chopped sun-dried tomatoes
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  • In a small bowl, whisk together the eggs, salt, and pepper.
  • Heat the olive oil in a non-stick skillet over medium heat.
