Ingredients

  • 1 lb ground beef
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 low-carb sub rolls
  • 1 cup marinara sauce
  • 4 slices provolone cheese

Instructions

  • Preheat oven to 375°F.
  • In a large bowl, combine ground beef, almond flour, Parmesan cheese, egg, parsley, basil, garlic powder, onion powder, salt, and black pepper. Mix well.
  • Form mixture into 12 meatballs and place on a baking sheet.
  • Bake meatballs for 20-25 minutes, or until cooked through.
  • While meatballs are cooking, heat marinara sauce in a small saucepan over medium heat.
  • When meatballs are done, remove from oven and place 3 meatballs on each sub roll.
  • Top each sub with 1/4 cup of marinara sauce and 1 slice of provolone cheese.
  • Place subs on a baking sheet and broil for 2-3 minutes, or until cheese is melted and bubbly.
  • Serve hot and enjoy!
