Ingredients

  • 1 lb ground chicken
  • 1 head cauliflower, riced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 cup chopped cilantro
  • 2 tbsp ghee

Instructions

  • In a large skillet, heat ghee over medium-high heat.
  • Add onion and cook until softened, about 5 minutes.
  • Add garlic and ginger and cook for another minute.
  • Add ground chicken and cook until browned, breaking it up with a spoon as it cooks.
  • Add cauliflower rice and spices and stir to combine.
  • Reduce heat to medium-low and cover skillet with a lid.
  • Cook for 10-15 minutes, stirring occasionally, until cauliflower is tender and chicken is cooked through.
  • Stir in cilantro and serve hot.
