Ingredients
- 1 lb ground chicken
- 1 head cauliflower, riced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- 1/2 tsp chili powder
- 1/2 tsp salt
- 1/4 cup chopped cilantro
- 2 tbsp ghee
Instructions
- In a large skillet, heat ghee over medium-high heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and ginger and cook for another minute.
- Add ground chicken and cook until browned, breaking it up with a spoon as it cooks.
- Add cauliflower rice and spices and stir to combine.
- Reduce heat to medium-low and cover skillet with a lid.
- Cook for 10-15 minutes, stirring occasionally, until cauliflower is tender and chicken is cooked through.
- Stir in cilantro and serve hot.
