Ingredients

  • 2 cups cauliflower rice
  • 1 tablespoon coconut oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can diced tomatoes
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 1 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1 pound chicken thighs, boneless and skinless
  • 1 cup chicken broth
  • Fresh parsley, for garnish

Instructions

  • In a large skillet, heat the coconut oil over medium heat.
  • Add the onion and garlic and sauté until fragrant.
  • Add the bell peppers and cook until softened.
  • Stir in the diced tomatoes, paprika, thyme, curry powder, cayenne pepper, salt, and pepper.
  • Add the chicken thighs and cook until browned on all sides.
  • Pour in the chicken broth and bring to a simmer.
  • Cover and cook for 20 minutes, or until the chicken is cooked through.
  • Remove the chicken from the skillet and shred it with two forks.
  • Return the shredded chicken to the skillet and stir in the cauliflower rice.
  • Cook for an additional 5 minutes, or until the cauliflower rice is heated through.
  • Garnish with fresh parsley and serve hot.
