Ingredients
- 2 cups cauliflower rice
- 1 tablespoon coconut oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 can diced tomatoes
- 1 teaspoon paprika
- 1 teaspoon thyme
- 1 teaspoon curry powder
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
- 1 pound chicken thighs, boneless and skinless
- 1 cup chicken broth
- Fresh parsley, for garnish
Instructions
- In a large skillet, heat the coconut oil over medium heat.
- Add the onion and garlic and sauté until fragrant.
- Add the bell peppers and cook until softened.
- Stir in the diced tomatoes, paprika, thyme, curry powder, cayenne pepper, salt, and pepper.
- Add the chicken thighs and cook until browned on all sides.
- Pour in the chicken broth and bring to a simmer.
- Cover and cook for 20 minutes, or until the chicken is cooked through.
- Remove the chicken from the skillet and shred it with two forks.
- Return the shredded chicken to the skillet and stir in the cauliflower rice.
- Cook for an additional 5 minutes, or until the cauliflower rice is heated through.
- Garnish with fresh parsley and serve hot.
