Ingredients
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 1 can diced tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves, for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the ground beef and cook until browned. Remove from the skillet and set aside.
- In the same skillet, add the onion, garlic, bell pepper, zucchini, and mushrooms. Cook until the vegetables are tender.
- Add the diced tomatoes, tomato paste, oregano, basil, salt, black pepper, and red pepper flakes. Stir to combine.
- Return the ground beef to the skillet and stir to combine with the vegetables and sauce.
- Simmer for 10 minutes, or until the sauce has thickened.
- Preheat the oven to 375°F (190°C).
- Transfer the mixture to a baking dish and top with the shredded mozzarella and Parmesan cheese.
- Bake for 15 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil leaves before serving.
