Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 can diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish

Instructions

  • In a large skillet, heat the olive oil over medium heat.
  • Add the ground beef and cook until browned. Remove from the skillet and set aside.
  • In the same skillet, add the onion, garlic, bell pepper, zucchini, and mushrooms. Cook until the vegetables are tender.
  • Add the diced tomatoes, tomato paste, oregano, basil, salt, black pepper, and red pepper flakes. Stir to combine.
  • Return the ground beef to the skillet and stir to combine with the vegetables and sauce.
  • Simmer for 10 minutes, or until the sauce has thickened.
  • Preheat the oven to 375°F (190°C).
  • Transfer the mixture to a baking dish and top with the shredded mozzarella and Parmesan cheese.
  • Bake for 15 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh basil leaves before serving.
