Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro

Instructions

  • Preheat oven to 375°F.
  • In a large skillet, cook ground beef over medium heat until browned.
  • Add onion, garlic, and bell peppers and cook until vegetables are tender.
  • Stir in diced tomatoes, tomato sauce, chili powder, cumin, paprika, salt, and black pepper.
  • Simmer for 10 minutes.
  • Spread half of the beef mixture in the bottom of a 9x13 inch baking dish.
  • Sprinkle with half of the cheese.
  • Repeat layers with remaining beef mixture and cheese.
  • Bake for 20 minutes, or until cheese is melted and bubbly.
  • Garnish with chopped cilantro before serving.
