Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cauliflower rice
  • 1 can diced tomatoes
  • 1 tablespoon tomato paste
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil, for garnish

Instructions

  • In a large skillet, heat the olive oil over medium heat.
  • Add the onion and garlic and cook until softened.
  • Add the ground beef and cook until browned.
  • Add the bell pepper, zucchini, and cauliflower rice. Cook until vegetables are tender.
  • Stir in the diced tomatoes, tomato paste, Italian seasoning, salt, black pepper, and red pepper flakes.
  • Simmer for 10 minutes to allow the flavors to meld together.
  • Preheat the oven to 375°F (190°C).
  • Transfer the mixture to a baking dish and top with mozzarella and Parmesan cheese.
  • Bake for 15-20 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh basil before serving.
