Ingredients
- 1 pound beef, thinly sliced
- 2 tablespoons coconut oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 can coconut milk
- 1 cup beef broth
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon erythritol
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- In a large skillet, heat the coconut oil over medium heat.
- Add the onion, garlic, and ginger to the skillet and cook until softened.
- Add the beef to the skillet and cook until browned.
- In a small bowl, combine the curry powder, turmeric, cumin, and paprika.
- Add the spice mixture to the skillet and stir to coat the beef and vegetables.
- Pour in the coconut milk, beef broth, fish sauce, soy sauce, and erythritol.
- Bring the mixture to a simmer and let cook for 15-20 minutes, or until the beef is tender.
- Season with salt and pepper to taste.
- Serve the curry beef over cauliflower rice or zucchini noodles.
