Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup chicken broth
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
Instructions
- Place the chicken breasts in the crockpot.
- In a small bowl, mix together the chicken broth, olive oil, minced garlic, dried thyme, dried rosemary, dried oregano, salt, black pepper, and red pepper flakes.
- Pour the mixture over the chicken breasts in the crockpot.
- Cover the crockpot and cook on low heat for 6-8 hours or high heat for 3-4 hours, until the chicken is cooked through and tender.
- Remove the chicken from the crockpot and shred it using two forks.
- Return the shredded chicken to the crockpot and mix it with the cooking liquid.
- Stir in the grated Parmesan cheese and chopped fresh parsley.
- Cover the crockpot again and cook on low heat for an additional 30 minutes to allow the flavors to meld together.
