Perfect for those following a low-carb diet, this dish offers a taste of Provence with ease and elegance. Its rich flavors are complemented by a delightful blend of garlic, onions, and a savory broth.

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14 oz)
  • 1/2 cup chicken broth
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh oregano
  • Salt and pepper, to taste

Directions

  1. 1

    Preheat oven to 375°F (190°C).

  2. 2

Season chicken thighs with salt and pepper.

  3. 3

Heat olive oil in a large oven-safe skillet over medium-high heat.

  4. 4

Brown chicken thighs for 5 minutes per side and set aside.

  5. 5

Sauté onion and garlic in the same skillet until softened, about 3 minutes.

  6. 6

Stir in tomatoes, chicken broth, thyme, rosemary, and oregano.

  7. 7

Return chicken to the skillet, baste with tomato mixture.

  8. 8

Bake in the oven for 25-30 minutes until chicken is fully cooked.

Chef's tip

For a more authentic flavor, consider adding a splash of white wine to the tomato mixture. Adjust salt and pepper to taste after cooking.
