Ingredients
- 2 boneless, skinless chicken breasts, sliced into thin strips
- 1 tablespoon coconut oil
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/2 cup sliced mushrooms
- 1/4 cup chopped peanuts
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon lime juice
- 1 teaspoon chili paste
- 1/4 teaspoon black pepper
- 4 ounces shirataki noodles
Instructions
- Heat the coconut oil in a large skillet over medium-high heat.
- Add the chicken and garlic and cook until the chicken is browned and cooked through, about 5 minutes.
- Add the bell peppers and mushrooms and cook for another 3-4 minutes, until the vegetables are tender.
