Ingredients
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 large cauliflower head, riced
- 1/2 cup ghee
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 tbsp ginger, minced
- 1 tbsp garam masala
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp cinnamon
- 1/2 tsp cardamom
- 1/2 tsp black pepper
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup chopped fresh cilantro
- Salt, to taste
Instructions
- In a large skillet, heat the ghee over medium-high heat.
- Add the onion and cook until softened, about 5 minutes.
- Add the garlic and ginger and cook for another minute.
- Add the chicken and cook until browned on all sides, about 5 minutes.
- Add the spices and cook for another minute.
- Add the cauliflower rice and stir to combine.
- Add the chicken broth and bring to a simmer.
- Reduce the heat to low and cover the skillet.
- Cook for 10-15 minutes, or until the chicken is cooked through and the cauliflower is tender.
- Stir in the heavy cream and cilantro.
- Season with salt, to taste.
- Serve hot.
