Ingredients

  • 1 head cauliflower, riced
  • 2 tablespoons coconut oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup frozen peas and carrots
  • 3 tablespoons soy sauce
  • 2 eggs, beaten
  • 1/4 cup chopped green onions

Instructions

  • Heat the coconut oil in a large skillet over medium-high heat.
  • Add the onion and garlic and sauté for 2-3 minutes, until softened.
  • Add the red bell pepper and sauté for another 2-3 minutes.
  • Add the cauliflower rice and frozen peas and carrots and sauté for 5-7 minutes, until the vegetables are tender.
  • Push the vegetables to one side of the skillet and add the beaten eggs to the other side.
  • Scramble the eggs until cooked through, then mix them into the vegetables.
  • Add the soy sauce and stir to combine.
  • Garnish with chopped green onions and serve hot.
