Keto Cauliflower Fried Rice Delight
This low-carb version of fried rice is made with cauliflower rice and packed with flavor. It's a healthy and delicious alternative to traditional fried rice.
Nutrition Per Serving
- 1 head cauliflower, riced
- 2 tablespoons coconut oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup frozen peas and carrots
- 3 tablespoons soy sauce
- 2 eggs, beaten
- 1/4 cup chopped green onions
- Heat the coconut oil in a large skillet over medium-high heat.
- Add the onion and garlic and sauté for 2-3 minutes, until softened.
- Add the red bell pepper and sauté for another 2-3 minutes.
- Add the cauliflower rice and frozen peas and carrots and sauté for 5-7 minutes, until the vegetables are tender.
- Push the vegetables to one side of the skillet and add the beaten eggs to the other side.
- Scramble the eggs until cooked through, then mix them into the vegetables.
- Add the soy sauce and stir to combine.
- Garnish with chopped green onions and serve hot.
