Ingredients

- 1 tbsp olive oil
- 1/2 onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can (14 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped fresh parsley

Preheat oven to 375°F (190°C).

Heat olive oil in a large skillet over medium heat. Add ground beef, cooking until browned. Drain excess fat.

Add onion, red and green bell peppers to the skillet. Cook until vegetables are tender, about 5 minutes.

Stir in diced tomatoes, tomato sauce, garlic powder, onion powder, oregano, basil, salt, and pepper. Simmer for 10 minutes.

Transfer mixture to a 9x13 inch baking dish. Sprinkle shredded cheddar cheese over the top.
