- 4 large eggs
- 1/4 cup heavy cream
- 1/4 cup shredded cheddar cheese
- 2 slices bacon, cooked and crumbled
- 1/4 avocado, diced
- 1 tbsp chopped fresh chives
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F.
- In a medium bowl, whisk together eggs and heavy cream. Season with salt and pepper.
- Grease a 6-cup muffin tin with cooking spray.
- Divide the egg mixture evenly among the muffin cups.
- Sprinkle shredded cheese, bacon, avocado, and chives over the top of each muffin cup.
