  • 1 large cauliflower, cut into florets
  • 1 large onion, sliced
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 2 eggs
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup coconut oil
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint
  • 1/4 cup chopped scallions
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cucumber
  • 1/4 cup chopped tomato
  • 1/4 cup chopped avocado
  • 1/4 cup chopped jalapeno
  • 1/4 cup lime juice
  • 1/4 cup olive oil

Instructions

  • Preheat oven to 400°F.
  • In a large bowl, combine almond flour, coconut flour, eggs, cumin, coriander, turmeric, garam masala, salt, and black pepper.
  • Add cauliflower florets and onion slices to the bowl and toss to coat with the flour mixture.
  • Spread the cauliflower and onion mixture on a baking sheet and drizzle with coconut oil.
  • Bake for 25-30 minutes, or until the cauliflower is tender and golden brown.
  • In a separate bowl, combine cilantro, mint, scallions, red onion, cucumber, tomato, avocado, jalapeno, lime juice, and olive oil.
  • Serve the roasted cauliflower and onion mixture in bowls and top with the herb and vegetable mixture.
