Ingredients
- 1 large cauliflower, cut into florets
- 1 large onion, sliced
- 1 cup almond flour
- 1/2 cup coconut flour
- 2 eggs
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- 1 tsp garam masala
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup coconut oil
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint
- 1/4 cup chopped scallions
- 1/4 cup chopped red onion
- 1/4 cup chopped cucumber
- 1/4 cup chopped tomato
- 1/4 cup chopped avocado
- 1/4 cup chopped jalapeno
- 1/4 cup lime juice
- 1/4 cup olive oil
Instructions
- Preheat oven to 400°F.
- In a large bowl, combine almond flour, coconut flour, eggs, cumin, coriander, turmeric, garam masala, salt, and black pepper.
- Add cauliflower florets and onion slices to the bowl and toss to coat with the flour mixture.
- Spread the cauliflower and onion mixture on a baking sheet and drizzle with coconut oil.
- Bake for 25-30 minutes, or until the cauliflower is tender and golden brown.
- In a separate bowl, combine cilantro, mint, scallions, red onion, cucumber, tomato, avocado, jalapeno, lime juice, and olive oil.
- Serve the roasted cauliflower and onion mixture in bowls and top with the herb and vegetable mixture.
