Keto Beefy Mushroom Stroganoff
This keto-friendly version of beef stroganoff is made with tender strips of beef, sautéed mushrooms, and a creamy sauce that's low in carbs and high in flavor.
Nutrition Per Serving
- 1 lb. beef sirloin, sliced into thin strips
- 8 oz. mushrooms, sliced
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup beef broth
- 1/2 cup sour cream
- 2 tbsp. olive oil
- 1 tbsp. butter
- 1 tsp. paprika
- 1/2 tsp. dried thyme
- Salt and pepper, to taste
- In a large skillet, heat the olive oil and butter over medium-high heat.
- Add the beef strips and cook until browned on all sides, about 5 minutes.
- Remove the beef from the skillet and set aside.
- Add the mushrooms, onion, and garlic to the skillet and cook until the vegetables are tender, about 5 minutes.
- Stir in the paprika and thyme.
- Add the beef broth and bring to a simmer.
- Return the beef to the skillet and simmer for 10 minutes.
- Stir in the sour cream and cook for an additional 5 minutes.
- Season with salt and pepper, to taste.
- Serve hot over cauliflower rice or zucchini noodles.
