Ingredients

  • 1 lb. beef sirloin, sliced into thin strips
  • 8 oz. mushrooms, sliced
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/2 cup sour cream
  • 2 tbsp. olive oil
  • 1 tbsp. butter
  • 1 tsp. paprika
  • 1/2 tsp. dried thyme
  • Salt and pepper, to taste

Instructions

  • In a large skillet, heat the olive oil and butter over medium-high heat.
  • Add the beef strips and cook until browned on all sides, about 5 minutes.
  • Remove the beef from the skillet and set aside.
  • Add the mushrooms, onion, and garlic to the skillet and cook until the vegetables are tender, about 5 minutes.
  • Stir in the paprika and thyme.
  • Add the beef broth and bring to a simmer.
  • Return the beef to the skillet and simmer for 10 minutes.
  • Stir in the sour cream and cook for an additional 5 minutes.
  • Season with salt and pepper, to taste.
  • Serve hot over cauliflower rice or zucchini noodles.
