Ingredients
- 1 lb beef sirloin, sliced into thin strips
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 cup beef broth
- 1 cup heavy cream
- 2 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 1 tsp paprika
- 1/4 tsp nutmeg
- Salt and pepper, to taste
- 4 medium zucchini, spiralized
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the beef strips and cook until browned on all sides, about 5 minutes.
- Remove the beef from the skillet and set aside.
- Add the onion and garlic to the skillet and cook until softened, about 3 minutes.
- Add the mushrooms and cook until they release their liquid and start to brown, about 5 minutes.
- Add the beef broth, heavy cream, Dijon mustard, Worcestershire sauce, paprika, nutmeg, salt, and pepper to the skillet.
- Bring the mixture to a simmer and cook until the sauce has thickened, about 10 minutes.
- Add the beef back to the skillet and cook until heated through, about 5 minutes.
- Serve the beef stroganoff over spiralized zucchini noodles.
