Ingredients

  • 1 lb beef sirloin, sliced into thin strips
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup beef broth
  • 1 cup heavy cream
  • 2 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp paprika
  • 1/4 tsp nutmeg
  • Salt and pepper, to taste
  • 4 medium zucchini, spiralized

Instructions

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the beef strips and cook until browned on all sides, about 5 minutes.
  • Remove the beef from the skillet and set aside.
  • Add the onion and garlic to the skillet and cook until softened, about 3 minutes.
  • Add the mushrooms and cook until they release their liquid and start to brown, about 5 minutes.
  • Add the beef broth, heavy cream, Dijon mustard, Worcestershire sauce, paprika, nutmeg, salt, and pepper to the skillet.
  • Bring the mixture to a simmer and cook until the sauce has thickened, about 10 minutes.
  • Add the beef back to the skillet and cook until heated through, about 5 minutes.
  • Serve the beef stroganoff over spiralized zucchini noodles.
