Ingredients

  • 2 lbs beef stew meat
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup diced tomatoes
  • 1 cup chopped celery
  • 1 cup carrots, chopped into large chunks
  • 1 cup celery root, peeled and diced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste

Directions

    Heat 1 tablespoon of olive oil in a large Dutch oven over medium heat. Add beef in a single layer and sear until browned. Work in batches if necessary.

    Remove beef and set aside. Add remaining olive oil and sauté onion and garlic until softened.

    Return beef to the pot. Add beef broth, diced tomatoes, thyme, rosemary, bay leaves, salt, and pepper. Scrape up browned bits from the bottom.

    Bring to a boil, then reduce heat to medium-low. Cover and simmer for 45-60 minutes until beef is almost tender.

    Add carrots and celery root. Increase heat to bring to a boil again. Cover and simmer for about 15 minutes until vegetables are tender.

    Serve hot, garnished with fresh thyme if desired.
