Ingredients

  • 1 lb. flank steak, sliced thin
  • 2 tbsp. coconut oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp. ginger, minced
  • 1/4 cup soy sauce
  • 1 tbsp. sesame oil
  • 1 tbsp. rice vinegar
  • 1 tsp. erythritol
  • 1/4 tsp. red pepper flakes
  • 1/4 cup chopped scallions

Instructions

  • Heat a large skillet over high heat. Add the coconut oil and swirl to coat the pan.
  • Add the sliced flank steak and cook for 2-3 minutes, until browned on all sides.
  • Remove the steak from the pan and set aside.
  • Add the sliced bell peppers and onion to the pan and cook for 2-3 minutes, until slightly softened.
  • Add the minced garlic and ginger to the pan and cook for 1 minute, until fragrant.
  • In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, erythritol, and red pepper flakes.
  • Add the steak back to the pan and pour the sauce over the top.
  • Cook for 1-2 minutes, until the sauce has thickened and the steak is cooked through.
  • Garnish with chopped scallions and serve hot.
