Ingredients
- 1 lb. flank steak, sliced thin
- 2 tbsp. coconut oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1 tbsp. ginger, minced
- 1/4 cup soy sauce
- 1 tbsp. sesame oil
- 1 tbsp. rice vinegar
- 1 tsp. erythritol
- 1/4 tsp. red pepper flakes
- 1/4 cup chopped scallions
Instructions
- Heat a large skillet over high heat. Add the coconut oil and swirl to coat the pan.
- Add the sliced flank steak and cook for 2-3 minutes, until browned on all sides.
- Remove the steak from the pan and set aside.
- Add the sliced bell peppers and onion to the pan and cook for 2-3 minutes, until slightly softened.
- Add the minced garlic and ginger to the pan and cook for 1 minute, until fragrant.
- In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, erythritol, and red pepper flakes.
- Add the steak back to the pan and pour the sauce over the top.
- Cook for 1-2 minutes, until the sauce has thickened and the steak is cooked through.
- Garnish with chopped scallions and serve hot.
