Ingredients

  • 4 slices bacon, chopped
  • 1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cups shredded zucchini
  • 1 cup shredded cheddar cheese
  • 1/4 cup almond flour
  • 2 tbsp. olive oil
  • Salt and pepper, to taste

Instructions

  • In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and set aside.
  • Add the chicken to the skillet and cook until browned on all sides, about 5 minutes. Remove from the skillet and set aside.
  • Add the onion and garlic to the skillet and cook until softened, about 3 minutes.
  • Add the shredded zucchini to the skillet and cook until tender, about 5 minutes.
  • In a small bowl, mix together the almond flour, salt, and pepper. Sprinkle the mixture over the zucchini and stir to combine.
  • Add the chicken and bacon back to the skillet and stir to combine.
  • Sprinkle the shredded cheddar cheese over the top of the skillet and cover with a lid. Cook until the cheese is melted and bubbly, about 5 minutes.
  • Serve hot and enjoy!
