Keto Bacon Chicken Rosti Skillet

- 4 slices bacon, chopped
- 1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 cups shredded zucchini
- 1 cup shredded cheddar cheese
- 1/4 cup almond flour
- 2 tbsp. olive oil
- Salt and pepper, to taste
- In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and set aside.
- Add the chicken to the skillet and cook until browned on all sides, about 5 minutes. Remove from the skillet and set aside.
