Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons authentic jerk seasoning
  • 1 tablespoon olive oil
  • 1 lime, juiced
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 tablespoon brown sugar
  • 2 green onions, chopped
  • 2 cloves garlic, finely chopped
  • 1 teaspoon fresh ginger, grated
  • 1 habanero pepper, chopped

Directions

  1. 1

Trim excess fat from the chicken and pat dry with paper towels.

  2. 2

In a food processor, blend green onions, garlic, ginger, habanero, lime juice, olive oil, and brown sugar.

  3. 3

Combine the paste with jerk seasoning, salt, pepper, garlic powder, onion powder, thyme, and paprika.

  4. 4

Rub marinade over chicken, cover, and marinate in the fridge for at least 1 hour.

  5. 5

Preheat grill to medium-high. Grill chicken for about 6-8 minutes on each side or until internal temperature reaches 165°F (74°C).

  6. 6

Rest chicken for 5 minutes before serving. Enjoy!

Chef's tip

Ensure chicken is fully cooked by checking internal temperature. Spice levels can be adjusted by varying the amount of habanero pepper.
