Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 sweet potato, peeled and cubed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1/2 red onion, sliced
- 1 can chickpeas, drained and rinsed
- 1 avocado, sliced
- 1/4 cup pumpkin seeds
- 1/4 cup dried cranberries
- 1/4 cup crumbled feta cheese
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat oven to 400°F.
- In a medium saucepan, bring quinoa and vegetable broth to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes or until all liquid is absorbed.
- Meanwhile, spread sweet potato, bell peppers, zucchini, and red onion on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for 20-25 minutes or until vegetables are tender and lightly browned.
- Divide quinoa among four bowls. Top with roasted vegetables, chickpeas, avocado, pumpkin seeds, dried cranberries, and feta cheese.
- Serve immediately and enjoy!
