Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 sweet potato, peeled and cubed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1/2 red onion, sliced
  • 1 can chickpeas, drained and rinsed
  • 1 avocado, sliced
  • 1/4 cup pumpkin seeds
  • 1/4 cup dried cranberries
  • 1/4 cup crumbled feta cheese
  • Salt and pepper to taste
  • Olive oil

Instructions

  • Preheat oven to 400°F.
  • In a medium saucepan, bring quinoa and vegetable broth to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes or until all liquid is absorbed.
  • Meanwhile, spread sweet potato, bell peppers, zucchini, and red onion on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for 20-25 minutes or until vegetables are tender and lightly browned.
  • Divide quinoa among four bowls. Top with roasted vegetables, chickpeas, avocado, pumpkin seeds, dried cranberries, and feta cheese.
  • Serve immediately and enjoy!
