Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeno, seeded and diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • Salt and pepper to taste
  • 1 package refrigerated pie crusts
  • 1 egg, beaten

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the diced onion, minced garlic, and jalapeno to the skillet. Cook until the onion is translucent.
  • Stir in the cumin, chili powder, paprika, oregano, salt, and pepper. Cook for an additional 2 minutes.
  • Remove the skillet from the heat and let the mixture cool slightly.
  • Unroll the refrigerated pie crusts and cut out circles using a round cookie cutter or a glass.
  • Place a spoonful of the ground beef mixture onto each circle of dough.
  • Fold the dough over the filling to create a half-moon shape. Use a fork to seal the edges.
  • Brush the empanadas with the beaten egg.
  • Place the empanadas on a baking sheet lined with parchment paper.
