  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup kale, chopped
  • 1/2 cup green goddess dressing
  • Salt and pepper to taste

Instructions

  • Rinse quinoa and add to a pot with vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until quinoa is cooked through.
  • In a large bowl, combine cooked quinoa, avocado, cherry tomatoes, cucumber, and kale.
  • Drizzle green goddess dressing over the top and toss to combine.
  • Season with salt and pepper to taste.
