Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup kale, chopped
- 1/2 cup green goddess dressing
- Salt and pepper to taste
Instructions
- Rinse quinoa and add to a pot with vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until quinoa is cooked through.
- In a large bowl, combine cooked quinoa, avocado, cherry tomatoes, cucumber, and kale.
- Drizzle green goddess dressing over the top and toss to combine.
