- 1 cup quinoa
- 2 cups water
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
Instructions
- In a medium saucepan, combine quinoa, water, and salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until quinoa is tender and water is absorbed.
- Meanwhile, heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
- Add bell peppers, black beans, corn, cumin, chili powder, black pepper, and cayenne pepper. Cook for 5-7 minutes, or until vegetables are tender.
- Stir in cooked quinoa, cilantro, and lime juice. Serve hot or cold.
