  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced

Instructions

  • In a medium saucepan, combine quinoa, water, and salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until quinoa is tender and water is absorbed.
