Ingredients

  • 1 lb white fish fillets
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 can diced tomatoes
  • 4 cups fish or vegetable broth
  • 1 bay leaf
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  • In a large pot, heat some oil over medium heat.
  • Add the onion and garlic and cook until softened.
  • Add the carrots and celery and cook for another 5 minutes.
  • Add the diced tomatoes, fish broth, bay leaf, and thyme.
  • Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Add the fish fillets and cook for another 5-7 minutes, until fish is cooked through.
  • Season with salt and pepper to taste.
  • Serve hot and enjoy!
