Ingredients
- 1 lb white fish fillets
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 can diced tomatoes
- 4 cups fish or vegetable broth
- 1 bay leaf
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat.
- Add the onion and garlic and cook until softened.
- Add the carrots and celery and cook for another 5 minutes.
- Add the diced tomatoes, fish broth, bay leaf, and thyme.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add the fish fillets and cook for another 5-7 minutes, until fish is cooked through.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
