Classic English Fish Batter

About this recipe

This recipe provides a classic English fish batter, perfect for achieving a delightful crispy crust while keeping the fish tender inside. Ideal for a quick and satisfying meal, pair it with tartar sauce or lemon wedges for a traditional fish and chips experience.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup rice flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/2 cup cold lager
  • 1/2 cup cold sparkling water
  • 1 pound white fish fillets, patted dry
  • Vegetable oil for frying

Directions

  1. 1

Whisk together all-purpose flour, rice flour, baking powder, salt, paprika, and black pepper in a bowl.

  2. 2

Gradually add cold lager and sparkling water, whisking until smooth.

  3. 3

Let the batter rest in the refrigerator for at least 30 minutes.

  4. 4

Heat vegetable oil in a heavy skillet or deep fryer to 375°F (190°C).

  5. 5

Dip fish fillets into the batter, allowing excess to drip off.

  6. 6

Place fish gently into the hot oil, frying until golden brown and crispy, about 3-4 minutes per side.

  7. 7

Remove fish and drain on a wire rack set over paper towels.

  8. 8

Serve immediately with tartar sauce or lemon wedges.

Chef's tip

For an extra crispy texture, make sure the beer and water are very cold before mixing them into the batter.
