About this recipe

Indulge in a classic bistro-style meal at home with juicy, perfectly seared steak and crispy, homemade bistro fries. This contemporary take ensures a rich flavor and delightful texture, perfect for a weeknight treat or a weekend feast.

Ingredients

  • 2 ribeye steaks (about 1 inch thick)
  • 4 large russet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt, plus more for seasoning
  • 1 teaspoon black pepper, freshly ground
  • 2 teaspoons garlic powder
  • 1 teaspoon smoked paprika
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, smashed
  • 3 sprigs fresh thyme

Directions

  1. 1

Soak potato strips in cold water for 30 minutes, then drain and pat dry.

  2. 2

Preheat oven to 425°F (220°C) for fries.

  3. 3

Season steaks with salt, pepper, and garlic powder. Let sit at room temperature for 20 minutes.

  4. 4

Cut potatoes into thick fries. Toss with olive oil, 1 teaspoon salt, and black pepper. Arrange on a baking sheet.

  5. 5

Bake fries for 30 minutes, flipping halfway, until golden and crispy.

  6. 6

Heat a cast-iron skillet over medium-high heat. Add olive oil and sear steaks 4 minutes per side.

  7. 7

Add butter, smashed garlic, and thyme to skillet. Baste steaks with butter for 2 more minutes.

  8. 8

Let steaks rest for 5 minutes before slicing. Serve with fries.

Chef's tip

For optimal crispiness, ensure fries are thoroughly dried before baking. Resting the steak helps retain juices.
