Ingredients

  • 8 oz soba noodles
  • 1 cup edamame
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1/2 cup sliced green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped peanuts
  • 1/4 cup sesame seeds
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 1/2 tsp red pepper flakes
  • 1/2 cup cooked chicken breast, sliced

Instructions

  • Cook soba noodles according to package instructions. Drain and rinse with cold water.
  • In a large bowl, combine cooked soba noodles, edamame, shredded carrots, sliced cucumber, green onions, cilantro, chopped peanuts, and sesame seeds.
  • In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, grated ginger, minced garlic, and red pepper flakes.
  • Pour the dressing over the noodle mixture and toss to combine.
