Ingredients
- 8 oz soba noodles
- 1 cup edamame
- 1 cup shredded carrots
- 1 cup sliced cucumber
- 1/2 cup sliced green onions
- 1/4 cup chopped cilantro
- 1/4 cup chopped peanuts
- 1/4 cup sesame seeds
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp sesame oil
- 1 tsp grated ginger
- 1 clove garlic, minced
- 1/2 tsp red pepper flakes
- 1/2 cup cooked chicken breast, sliced
Instructions
- Cook soba noodles according to package instructions. Drain and rinse with cold water.
- In a large bowl, combine cooked soba noodles, edamame, shredded carrots, sliced cucumber, green onions, cilantro, chopped peanuts, and sesame seeds.
- In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, grated ginger, minced garlic, and red pepper flakes.
- Pour the dressing over the noodle mixture and toss to combine.
- Add sliced chicken breast to the bowl and gently toss to incorporate.
