Ingredients

  • 2 pounds mussels
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup white wine
  • 1/4 cup chopped parsley
  • Salt and pepper to taste

Instructions

  • 1. Clean the mussels by scrubbing them under cold water and removing any beards or debris.
