Ingredients
- 2 pounds mussels
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup white wine
- 1/4 cup chopped parsley
- Salt and pepper to taste
Instructions
- 1. Clean the mussels by scrubbing them under cold water and removing any beards or debris.
- 2. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and bell pepper, and cook until softened.
- 3. Add the cherry tomatoes and cook for another 2 minutes.
- 4. Pour in the white wine and bring to a simmer.
