Ingredients

  • 4 chicken pieces (legs and thighs)
  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried thyme
  • 1 tablespoon dried oregano
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 1 egg
  • Vegetable oil for frying

Directions

  1. 1

In a large bowl, whisk together flour, paprika, garlic powder, onion powder, thyme, oregano, salt, black pepper, and baking soda.

  2. 2

In a separate bowl, whisk together buttermilk and egg.

  3. 3

Dip each chicken piece into the buttermilk mixture, then into the flour mixture, pressing firmly to adhere.

  4. 4

Heat vegetable oil in a deep skillet or Dutch oven to 350°F (175°C).

  5. 5

Carefully place coated chicken pieces into the hot oil, skin side down.

  6. 6

Fry for about 10 minutes until crispy and golden brown.

  7. 7

Flip the chicken pieces and fry for an additional 10 minutes, ensuring internal temperature reaches 165°F (74°C).

  8. 8

Remove and drain on a wire rack. Serve hot.

Chef's tip

For a spicier kick, add cayenne pepper to the flour mixture. Ensure the oil temperature is maintained for proper crisping.
