About this recipe

Savor the taste of deliciously crispy fried chicken with this updated recipe inspired by KFC's secret recipe. This modern version uses home-friendly methods to achieve that irresistibly crunchy coating and juicy interior, perfect for family dinners or social gatherings.

Ingredients

  • 4 pounds chicken pieces
  • 2 cups buttermilk
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 tablespoon salt
  • 1 tablespoon dried thyme
  • 1 tablespoon dried basil
  • 1 tablespoon celery salt
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon ground ginger
  • 1 teaspoon white pepper
  • 4 cups vegetable oil for frying

Directions

  1. 1

In a large bowl, whisk together buttermilk and eggs.

  2. 2

Submerge chicken pieces in the buttermilk mixture, cover, and refrigerate for at least 30 minutes.

  3. 3

In another bowl, combine flour, paprika, salt, thyme, basil, celery salt, garlic powder, onion powder, black pepper, ground ginger, and white pepper.

  4. 4

Remove chicken from marinade, allowing excess to drip off, then coat thoroughly with the flour mixture.

  5. 5

Heat oil in a Dutch oven or large pot to 350°F (175°C).

  6. 6

Fry chicken in batches for about 12-15 minutes, turning halfway, until golden brown and internal temperature reaches 165°F (74°C).

  7. 7

Remove chicken and drain on a wire rack over a baking sheet.

  8. 8

Repeat with remaining chicken, ensuring oil returns to temperature between batches.

Chef's tip

For the crispiest results, ensure the oil returns to the correct temperature between batches. Serve with your favorite dipping sauces or sides like coleslaw and biscuits.
