Ingredients

  • 2 lbs beef stew meat, cut into 1-inch cubes
  • 3 tbsp olive oil
  • 1 large onion, chopped
  • 3 medium carrots, sliced
  • 3 medium potatoes, diced
  • 3 stalks celery, sliced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 4 cups low-sodium beef broth
  • 1/2 cup red wine
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped

Directions

    Preheat a large Dutch oven over medium-high heat and add 2 tbsp of olive oil.

    Season the beef with salt and pepper, then brown it in batches. Remove and set aside.

    Add remaining olive oil, then sauté onion, garlic, carrots, and celery until softened.

    Stir in tomato paste, cooking for 1 minute, then add wine to deglaze the pot.

    Return beef to the pot, add beef broth, thyme, rosemary, and bay leaves. Bring to a boil.

    Reduce heat, cover, and simmer for 1½ hours, stirring occasionally.

    Add potatoes and continue cooking uncovered for another 30 minutes or until tender.

Chef's tip

For a thicker stew, feel free to add a slurry of cornstarch and cold water at the end. Adjust seasoning to taste before serving.
