Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 cup plain yogurt
  • 2 tbsp lemon juice
  • 2 tbsp vegetable oil
  • 2 tbsp garam masala
  • 2 tsp ground cumin
  • 2 tsp ground paprika
  • 2 tsp ground turmeric
  • 2 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tsp ground cardamom
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream
  • 1/4 cup chopped fresh cilantro

Instructions

  • In a large bowl, combine yogurt, lemon juice, vegetable oil, garam masala, cumin, paprika, turmeric, coriander, cinnamon, cardamom, salt, and black pepper. Mix well.
  • Add chicken thighs to the marinade and coat them evenly. Cover the bowl and refrigerate for at least 1 hour, or overnight for best results.
  • Preheat the grill to medium-high heat. Remove the chicken from the marinade and shake off any excess. Grill the chicken for about 5-6 minutes per side, or until cooked through. Remove from the grill and let it rest for a few minutes.
  • In a large skillet, heat some vegetable oil over medium heat. Add chopped onion and cook until softened and lightly browned, about 5 minutes. Add minced garlic and grated ginger, and cook for another minute.
  • Stir in crushed tomatoes and bring the mixture to a simmer. Cook for about 10 minutes, stirring occasionally.
  • Add heavy cream and stir well. Simmer for another 5 minutes, or until the sauce thickens slightly.
  • Cut the grilled chicken into bite-sized pieces and add them to the skillet. Stir to coat the chicken with the sauce. Cook for an additional 5 minutes, or until the chicken is heated through.
  • Garnish with chopped fresh cilantro and serve hot with rice or naan bread.
