Ingredients
- 2 boneless, skinless chicken breasts
- 8 cups chicken broth
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- 2 cups egg noodles
- Salt and pepper to taste
Instructions
- In a large pot, bring the chicken broth to a boil.
- Add the chicken breasts, carrots, celery, onion, garlic, thyme, and bay leaf to the pot.
- Reduce heat to low and simmer for 20 minutes, or until the chicken is cooked through and tender.
- Remove the chicken breasts from the pot and shred them using two forks.
- Return the shredded chicken to the pot.
- Add the egg noodles to the pot and cook for an additional 8-10 minutes, or until the noodles are tender.
