This creamy chicken mushroom potato skillet is a delightful blend of tender chicken, earthy mushrooms, and soft potatoes all enveloped in a rich, savory sauce. Perfect for a cozy family dinner, this dish is comforting and satisfying, a sure way to delight everyone's taste buds.

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 lb baby potatoes, halved
  • 8 oz mushrooms, sliced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and freshly ground black pepper to taste
  • 1 tbsp chopped fresh parsley, for garnish

Directions

  1. 1

Heat olive oil in a large skillet over medium heat.

  2. 2

Season chicken with salt and pepper, then add to skillet. Cook until golden on all sides, about 5 minutes. Remove and set aside.

  3. 3

In the same skillet, add potatoes. Cook until browned and tender, about 12 minutes. Remove and set aside.

  4. 4

Add mushrooms and onion to the skillet; sauté until softened, about 5 minutes. Add garlic and cook for another minute.

  5. 5

Pour in chicken broth, scraping up any browned bits. Stir in heavy cream, Parmesan, thyme, paprika, salt, and pepper.

  6. 6

Return chicken and potatoes to the skillet. Simmer until the sauce thickens slightly and all ingredients are heated through, about 10 minutes.

  7. 7

Garnish with fresh parsley before serving. Enjoy!

Chef's tip

For a thicker sauce, let it simmer until desired consistency is reached.
