Ingredients
- 2 cups basmati rice
- 1 lb chicken, cut into pieces
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2 green chilies, slit
- 1/2 cup plain yogurt
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 cup chopped cilantro
- 1/4 cup chopped mint leaves
- 4 cups water
- Salt to taste
- Oil for cooking
Instructions
- Wash the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- Heat oil in a large pan or pot. Add the sliced onions and cook until golden brown.
- Add the minced garlic, grated ginger, and slit green chilies. Cook for a minute until fragrant.
- Add the chopped tomatoes and cook until they turn soft and mushy.
- Add the chicken pieces and cook until they are browned on all sides.
- In a small bowl, whisk together the yogurt, turmeric powder, red chili powder, garam masala, cumin powder, and coriander powder. Add this mixture to the pan and mix well.
- Add the soaked and drained rice to the pan. Stir gently to coat the rice with the spices.
- Add water and salt to taste. Bring the mixture to a boil, then reduce the heat to low. Cover the pan and cook for 15-20 minutes, or until the rice is cooked and the chicken is tender.
- Garnish with chopped cilantro and mint leaves. Serve hot.
