Ingredients

  • 2 cups basmati rice
  • 1 lb chicken, cut into pieces
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green chilies, slit
  • 1/2 cup plain yogurt
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped mint leaves
  • 4 cups water
  • Salt to taste
  • Oil for cooking

Instructions

  • Wash the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  • Heat oil in a large pan or pot. Add the sliced onions and cook until golden brown.
  • Add the minced garlic, grated ginger, and slit green chilies. Cook for a minute until fragrant.
  • Add the chopped tomatoes and cook until they turn soft and mushy.
  • Add the chicken pieces and cook until they are browned on all sides.
  • In a small bowl, whisk together the yogurt, turmeric powder, red chili powder, garam masala, cumin powder, and coriander powder. Add this mixture to the pan and mix well.
  • Add the soaked and drained rice to the pan. Stir gently to coat the rice with the spices.
  • Add water and salt to taste. Bring the mixture to a boil, then reduce the heat to low. Cover the pan and cook for 15-20 minutes, or until the rice is cooked and the chicken is tender.
  • Garnish with chopped cilantro and mint leaves. Serve hot.
