Ingredients

  • 2 cups basmati rice
  • 1 lb chicken, cut into pieces
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green chilies, slit
  • 1/2 cup plain yogurt
  • 1 teaspoon turmeric powder
  • 1 teaspoon Kashmiri red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped mint leaves
  • 1/4 cup lemon juice
  • 1/2 teaspoon saffron strands soaked in 2 tablespoons warm milk
  • 4 cups water
  • Salt to taste
  • 2 tablespoons ghee or oil

Directions

    Rinse the basmati rice several times until the water runs clear and soak for 30 minutes.

    In a large bowl, mix yogurt, lemon juice, ginger, garlic, chilies, turmeric, chili powder, garam masala, cumin, and coriander. Marinate the chicken in this mixture for at least 30 minutes.

    Heat ghee in a heavy-bottomed pot. Fry onions until golden brown, then remove half for garnishing.

    Add tomatoes to the pot and cook until soft. Then add marinated chicken and cook until browned.

    In a separate pot, par-cook drained rice until 70% done.

    Layer the chicken mixture and rice in the pot, topping each layer with cilantro, mint, fried onions, and saffron milk.

    Seal the pot with foil and a lid, then cook on low heat for 25 minutes until rice and chicken are fully cooked.
