About this recipe

Indulge in a creamy and comforting Chicken Alfredo, a timeless recipe revamped with simple yet refined techniques. Pairing tender sautéed chicken with a luscious Parmesan-infused sauce, this dish promises a delightful experience for the whole family. Perfect for a cozy evening or a special gathering.

Ingredients

  • 8 oz fettuccine pasta
  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/4 tsp nutmeg
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

Directions

  1. 1

Cook the fettuccine in a pot of salted boiling water until al dente, about 8-10 minutes. Reserve 1/2 cup of pasta water, then drain and set aside.

  2. 2

Season the chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken, cooking until golden and an internal temperature of 165°F, about 6-8 minutes per side. Remove and let rest.

  3. 3

In the same skillet, add minced garlic, cooking until fragrant, about 1 minute.

  4. 4

Stir in the heavy cream, Parmesan, and nutmeg. Simmer until the sauce thickens slightly, 3-4 minutes. Add reserved pasta water if needed for a smoother consistency.

  5. 5

    Slice the chicken into strips.

  6. 6

Toss the cooked pasta and chicken with the Alfredo sauce in the skillet until well coated. Adjust seasoning with salt and pepper.

  7. 7

Serve immediately, garnished with fresh parsley.

Chef's tip

Use fresh Parmesan for the best flavor. Adjust sauce thickness with pasta water as needed.
